Vegan BLT Stuffed Potato

Ingredients
  

  • 2 Russet Potato
  • 1 cup Romaine Lettuce washed and dried, chopped
  • 1 Beefsteak Tomato chopped into bite sized pieces
  • 2 ounces Vegan Mayo
  • 3 ounces *MyBacon vegan bacon made with Mycelium Mushrooms
  • Salt and Pepper to taste

  • 1 Skillet

Method
 

  1. Scrub the potato in cold water and keep the skin on. Pierce the unpeeled potato all over with a fork. Microwave the potato on high on a microwave-safe dish for 5-6 minutes, flipping halfway through. Remove from the microwave and cut in half lengthwise. Be careful, it's hot! Season with salt and pepper to your preference. In a skillet over medium heat, add 1/2 package of MyBacon (3 oz vegan bacon) or 4 pieces (using the included coconut oil) and cook for 8 minutes, turning frequently, until crispy. Crumble or chop into bite-size pieces. Wash and dry a handful of lettuce leaves, then thinly slice. Cut the tomato into bite-size pieces. Top each potato with MyBacon, lettuce, and tomato; drizzle with mayo.
