Vegan Caesar Dressing

Ingredients
  

  • 1/2 cup Vegan Mayo
  • 2 tbsp Lemon Juice
  • 1 tbsp Parsley Fresh 1 tsp dried
  • 1 tbsp Nutritional Yeast
  • 1 tbsp Capers
  • 1 tbsp Dijon Mustard
  • 1 tsp Caper Brine
  • 1-2 cloves Peeled Garlic *smashed or minced
  • Salt and Pepper to taste

Equipment

  • 1 Mini Food Processor
  • 1 Immersion Blender

Method
 

  1. I like to smash the garlic cloves prior to adding them to the food processor to ensure no big chunks get on your fork. Add all the ingredients to the food processor or immersion blender and mix until smooth. Add salt and pepper once blended to your preference. I recommend moving the blended mixture into a jar and place into the refrigerator for minimum two hours. The dressing can be made in advanced and stored in the refrigerator for up to 3 days.
    Tips for success:
    You can adjust the amount of any ingredient in the dressing to suit your preferences.
    Ensure the romaine lettuce is washed and completely dried. Gently toss to coat the lettuce with the dressing. Great for dipping artichokes and other vegetables too.
